Ingredients
400g large cooked prawns
4 Little Gem lettuces, shredded
5 heaped tbsp mayonnaise
5 tbsp tomato sauce
2 tsp Worcestershire sauce
1 tbsp Brandy
Squeeze of lemon juice
Small handful of chopped cucumber in dices
Small handful of chopped tomato in dices
Paprika, for dusting
Black pepper
A pinch of finely chopped parsley
Directions
STEP 1
Cut the gem lettuce into thin strips, then divide the lettuce evenly between four small glass bowls. Sprinkle the cucumber and tomato
and top with prawns and season with black pepper.
STEP 2
Mix the mayonnaise, tomato sauce, Worcestershire sauce and brandy. Season to taste with lemon juice, then spoon sparingly over the prawns. Dust the top with a little paprika and sprinkle with parsley. Delicious with buttered bread, cut into quarters.
